K my efforts... The Tarkari (bengali veg stew)
Indian cooking is a very different way of cooking but all you really have to do is get the hang of usunig the spice as the ingredients.

main ingredients;
1tsp black mustard seeds
1.5 dried, crushed chilis
1tsp fenugreek seeds
1.5 bay leaves

1tsp star anise
1tsp ground cumin

1 potato per person eating the dish, diced quite small
1 butternut squash, diced
1 large aubergine (egg plant), diced

a mug full of green beans or peas
1 mug of water

1tsp salt
1tsp brown sugar

plenty of cooking oil

ok so you need to make sure everything is ready to chuck into the pan as this can be more like alchemy than cooking, to star with, you need a hot, dry (not oil or water) pan, put your spices in it one at a time to roast them then take them out and grind them (still seperate)
if you do not wnt to do this you can always use ground spices but it really makes a big difference to the taste and the health benefit you get from the spice which work as tonics to the system and help cleanse the blood, boost immunity, fortify you with iron etc

right so now the spices are ready get your pan hot put plenty of oil in
add to it the chilis, mustard seeds, bay leaves and fenugreek seeds. if you do not like all the smoke turn your pan down but keep stirring.
as soon as the mustard seeds stop jumping around or a little before if you prefer, add the anise and cumin, stir and scrape, you will get a blakish paste start to form, put your potaoes in straight away and then fry them in this gunky lookin paste for about 5 mins, if you feel at any time you need to add more oil then go for it, n scrape n stir n stir, get all that paste off the pan and onto the taters, put in the squash, stir n scrape, put in the aubergine, stir scrape, fry off together for about 5 mins, stir and scrape and stir!
next add the beans and the water, stir well and then simmer for 15 mins, stirring and scraping once every 5 mins.
finally add the salt and suger, stir in well, serve as soon as you feel it is ready, which could be 2 mins after the salt and suger or 10, this bit's up to you.
tadaa! scrummy and nourishing, serve with rice and dahl, naan or poppadom or even chips!!

yum!!

3/4 cup sugar
3/4 cup brown sugar
1 cup of butter
2 large eggs beaten
1tsp vanilla essence
2 1/4 cups of flower
1tsp bicarbonate of soda
3/4 tsp salt
whatever chocolate or tasty treat you fancey

preheat oven to gas mark 5, (about 190c)

mix the sugars together, mix in the butter gently until you get a paste (this can be quite a physical task) add the vanilla then gently mix in the beaten eggs, now, even trickier, mix in the flour until it is smooth, add the soda and salt, mix in then drop in your choccy.

spoon on to a baking sheet, small spoonfulls will make harder biscuits that cook quicker, huge spoonfuls will make big doughy cookies that take about 12-15 mins to cook, leave plenty of space (4inches recommended) between each dollop as they spread really far!

turn onto a rack to settle for 10 mins then munch yum yum yum

This recipe is based on carrots instead of potatoes to make a very sweet and low GI mash.
1. The carrots should add up to 70 percent of the dish.
Clean the carrots with a scourer and cut off the ends.
Dice the carrots to 10 to 20 millimetre sections.

2. The rest is made up of fifty fifty sweet potatoes and pumpkin.
Remove the skin from the pumpkin and cut into smallish sections.
Skin the sweet potato and cut into small sections the same size as the carrots more or less.

You than place all the ingredients into a steamer for max health or in the source pan and boil until the carrots in particular are not so firm any more.

Once the required softness has been achieved for the three vegetables you than pour out the water using the lid to not let the vegies fall out.

Now add a little cut chives, a couple of tea spoons of margarine, a tea spoon of parmesan cheese powder, a tea spoon of natural honey, a half a teaspoon of mint sauce and a half tea spoon of powdered garlic.

Mash all the vegies quite thoroughly as the carrots can remain a little grainy if not mashed well, this done with the ingredients in with them and add in some standard so good soy milk or trim cows milk and stir until you reach the consistency you hoped for and eat.

This is far superior to mash potato and quite healthy as well.

Queensland Coral Trout --- is one of the most sought after Reef eating fish in Australia best known for its delicate taste and fine white flesh. It can be cooked in many diverse ways however i have chosen the grilled version for this dish.


Ingredients
-----------
4 180g Fillets of Coral Trout
2Lge Lemons
2 Lge Onions
2 lge cloves of garlic
Black pepper ground

Method
----------
Make a long slit in each fillet -place finely sliced onion - garlic - ground black pepper- and lemon .
wrap ln lightly oiled or buttered foil -fold over to make parcel .
place under medium heat - cook for 5 minutes on each side ( turn once only )

Side Dish

Fresh Garden Salad- cucumber tomato , and light mayonaise
Steamed New Baby Potatoes
garnished with a knob of butter and sprig of dill

We served this dish with a warm home made apple crumble pie ice -cream and a good white wine.

This dish can be had as an Entree or Main Course

Ingredients
--------------
10 Lge green prawns
1/2Lge Onion
1 lge clove of garlic
150 Ml of lite whipping cream
White Wine
1/2 Sml lemon
Sea Salt /Cracked Pepper
Parsley

Method
--------------
Heat wok on medium , finely chopped garlic and onion sautee with a tablesoon of light virgin olive oil until just soft .
Add a splash of white wine,reduce the liquid,then add a squeeze of fresh lemon juice.
Remove heads from prawns and add , cook for aprox 4 mins ,then add cream and simmer until just thickened.
Season with sea salt and cracked pepper to taste . adding 1/2 teaspoon of fresh chopped parsley is optional .
Serve on a bed of warm Basmati Rice

It tastes great, just like a bailies thick shake (adults only!)

4 parts Bailies
2 parts White rum
2 parts vodka
1 part gin
2 parts Kahlua
1 part camph coffee essence
crushed ice
whipped or spray cream
pour the alcohol carefully into a large jug containing the crushed ice pouring the bailies in gently, last
mix well
put the cream on top
enjoy!!
